Sweet Potato Bread


6 eggs

1 cup coconut flakes

½ cup coconut flour

½ cup almonds, flakes

½ cup pumpkin seeds

3 tsp psyllium husks

1 tbsp apple cider vinegar

1 tsp bicarbonate soda

1 sweet potato, peeled and boiled

½ cup melted Cremex

Pinch of salt

Seeds for topping


Preheat oven to 170ºc

Pulse coconut flakes with the almonds and coconut flour until flour-like

Blend the eggs, potato, vinegar and Cremex until nice and frothy

Add remaining ingredients to bowl and knead well

Grease a loaf tin

Add mixture to tin

Top with seeds

Bake for 50-60 minutes until cooked through (keep an eye on it)
